WHAT WE ARE
According to the michelin guide we are a smart, modern bistro de luxe with rich décor and crushed velvet banquettes, a deservedly busy spot where the attentive, personable service adds to the experience. White Guide explained our menu like this; the tasting menu offers freedom of choice. For each serving, three options are given - one vegetarian, one from the sea or lake and one with meat. It is a brilliant layout in every way and whatever you choose, you never risk having to wonder if the grass may be greener on the other side of the table.

COCKTAILS
when it comes down to our cocktails we love playing with the concept of reinventing classic cocktails like the Caipirinha. Our approach gets a lot of inspiration from the kitchen, where we truly analyze each ingredient for maximum flavour impact. Our goal is to create a symphony of surprising but yet relatable flavours.

The success of Carbon is rooted in our team of passionate and talented people. We hail from all types of backgrounds and have a variety of skills, but share a joy in making other people happy through delicious food and gracious hospitality. We think it's cool to care. In our restaurants we don't separate the kitchen and dining room. Instead, we work as partners to create a complete experience for our guests. We favor ability, ambition and enthusiasm over experience, and strive to build a team of diverse people committed to collaboration, contribution and excellence.
PAIRING
We at Carbon believe in breaking down barriers when it comes down to Floor, Kitchen and typical Hierachy. Each Wine, Non alcoholic beverage and dish is discussed with our team. We prefer an open communication and lots of imput from different backgrounds and flavour palettes. It makes our pairing unique and without pretence.
